Cacay (Caryodendron orinocense Karsten) is a hardy plant species native to South America, typical of the humid tropics. It is found in Colombia, Ecuador, Venezuela, and Peru.
In the Orinoquía region, Cacay begins flowering in August and bears fruit by the end of January. The harvest occurs once a year and lasts 2 to 3 months. As a dioecious species, only the female trees produce fruit. Male flowers can be identified by their four prominent stamens.
Cacay is a late-yielding crop, with the first harvest occurring between the 4th and 5th year after planting. Harvesting is annual, and the production volume depends on the age and nutritional status of the trees, sunlight exposure, canopy size, among other factors.
The Cacay nut has high nutritional value, including high-quality protein, minerals (calcium, iron, and phosphorus), fiber, oil rich in fatty acids (omegas 3 and 6, stearic, palmitic), and vitamins E and retinol. The oil extracted from Cacay is used in premium cosmetic products.
The Cacay fruit falls from the tree at optimal maturity, is collected manually daily, and processed. The postharvest treatment involves removing the outer husks and reducing the moisture content of the nuts to preserve their nutritional quality before oil extraction.
